⚽ World Cup 2018 Game 5 – France vs. Australia

I definitely wanted to make a macaron for one of the French matches but this pairing allowed me to also add the rugged outdoors of Australia. While macarons yield images of dainty and fragile innocence, the brown pasty Vegemite screams of the abyss. These two opposite personalities are tempered by a whipped brie filling to produce a final outcome that will have you saying “Ooh la la, mate.”

Savory and sweet macarons that looks and tastes a little French and Australian, mate. The vegemite adds a hint of saltiness but the highlight of the macarons is the tangy whipped brie filling.

Filling the Macaron
  1. Remove the skin from the brie and place the soft cheese in a bowl. Whip on high speed for 10 minutes, scraping down the sides periodically until you get an airy and fluffy mixture. Mix four toothpick dips of red gel coloring to cheese until you get red color.
  2. Fill piping bag with small star nozzle with whipped brie cheese mixture.
  3. Spread a thin layer of vegemite to half the cookies and pipe it with the whipped brie cheese. Top with the remaining cookies.
