  1. In a large bowl, combine skyr +eggs + 1 cup of sugar and mix until clumps are broken up and mixture is smooth. Add the milk + vanilla + rose water + rum + lemon peel and mix until well-incorporated.
  2. Pre heat oven to 300 degrees F.
  3. Put 1 cup of leftover sugar into a small pan over low heat. Let it dissolve, swirling the pan occassionally to help it along. Let it liquify until golden brown and one-by-one, pour mixture into the bottom of 4 ramekins, swirling the sides before it sets hard. You need to work quickly before it hardens.
  4. Put the ramekins into a deep oven-proof baking dish and fill the ramekins with custard mixture. Pour boiling water into the baking disk so that it comes 3/4 up to the sides of the ramekins.
  5. Put baking dish in the middle rack of the oven and bake for 40 minutes. Carefully remove the baking dish and cool the custard. Once it's cooled, cover and refrigerate for at least 6 hours.
  6. To serve, invert each ramekin onto plates.
