⚽ World Cup 2018 Game 52 – Croatia vs. Denmark
The sardine po’boy highlights the Croatians’s love of oily fish that is brightened by a Danish inspired slaw. A crusty french bread is stuffed with crispy pan fried sardines (fresh and not from a can) and topped with tomatoes and a dill remoulade slaw.

Ingredients
Remoulade sauce
- 1 cup mayo
- 1 tsp paprika
- 1 tsp dijon mustard
- 1/2 tsp ground onion powder
- 2 TBSP sweet pickle chopped
Slaw
- 1/4 cabbage shredded
- 1/4 red onion thinly sliced
- 1/2 tsp fresh ground black pepper
- 1 TBSP fresh dill chopped
- 1/4 cup Remoulade sauce
Po'Boy
- 8 sardines cleaned and filleted
- salt, pepper, and paprika season to taste
- 1 cup AP flour
- 2 eggs beaten
- 8 TBSP olive oil
- 2 tomatoes sliced
- french bread

Instructions
- Made the remoulade sauce and set aside. You also need it for the slaw.
- In a bowl, add all the ingredients for the remoulade slaw and mix well. Cover and refrigerate.
- Lay the sardine filets flat on a plate, skin side down. Season with salt + pepper + paprika.
- In a deep dish, add the flour for dredging. Have the eggs in another deep dish with the beaten egg. Dredge the sardine in the flour, then dip in the egg, and then coat it again with flour.
- Heat a skillet on medium and add 4 TBSP of olive oil. Cook 4 of the fish at a time, 3 minutes on each side. Remove the fish and place it on a paper towel-lined plate.
- To assemble the sandwich, split open the french bread and spread remoulade on the inside. Place two pieces of the fried sardine on the bottom. Top with sliced tomatoes and the slaw. Enjoy!
