Bite-sized Brazilian cheese breads are flavored with a smokey Serbian red pepper relish to make PAO DE AJVAR QUEIJO. Instead of the traditional parmesan, the pao is mixed with feta to give a salty, tart, and sweet taste to each chewy bite.

Pao de Ajvar Queijo
  1. Preheat oven to 375 degrees F.
  2. Combine olive oil, water, milk and salt in a medium saucepan and place over medium-high heat. When mixture comes to a boil, remove from heat immediately and stir in tapioca starch and ajvar until smooth. Let it rest for 15 minutes or until cool.
  3. In a small bowl, combine egg and feta. Add to dough mixture and mix well.
  4. Use an ice cream scoop to drop balls of mixture onto a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until a shell builds on the rounds.
