When that moment comes, celebrate with Kimchi Butter Meatballs, where iconic Swedish meatballs get a Korean enhancement by being smothered in a tangy and spicy kimchi butter gravy. Each beefy bite is packed with flavor that’s oh-so-comforting yet reassures you that your new non-Ikea furniture is going to work out fine.

Ingredients
Meatballs
- 1.5 lb lean ground beef
- 4 cloves garlic chopped
- 1 onion finely minced
- 1 large egg
- 1/2 tsp salt
- 1/2 tsp fresh ground black pepper
- 4 tsp bread crumbs
- 3 TBSP olive oil
Kimchi butter gravy
- 4 TBSP butter
- 3 TBSP AP flour
- 1 cup kimchi juice
- 1 cup beef broth
- 1 cup heavy cream
- 2 tsp Worcestershire sauce
- salt and pepper to taste
- 1/4 cup fresh parsley chopped
- chopped kimchi for garnish
- chopped scallions for garnish

Instructions
- Mix together all the meatball ingredients except olive oil and form 1.5 inch meatballs.
- Heat skillet to medium high and pour oil. Cook meatballs in skillet and turn occasionally to ensure that all sides have browned. It will take 7-10 minutes to cook the meaballs. Remove and place on paper towel-lined plate.
- Reduce heat to medium low and add butter and flour til it turns golden brown.
- Add kimchi juice and beef broth and cook for 4 minutes . Then add cream until sauce thickens. Add worcestershire sauce + salt + pepper until the sauce is creamy, then add the chopped parsley and incorporate well.
- Add the meatballs back into the pan and coat well with gravy.
- Serve with meatballs smothered in gravy and top each meatball with chopped kimchi and sliced scallions.
