Drool. Grumbling stomach. Extreme focusness. These are the only symptoms when you are afflicted with eating Cholera Peppers. I’ve adapted Serbian stuffed peppers by cramming it with Swiss cholera ingredients (yes, they actually have a dish named after the disease) of potatoes, bacon, leeks, cheese, and apple. The cheesy goodness is hearty and comforting, especially knowing these cholera peppers won’t kill you.

  1. Peel and cut potatoes into 1/2 inch cubes. Place them in a pot filled with water until it covers all the potatoes. Generously salt the water.
  2. Boil the potatoes for 5 minutes, drain, add paprika and mix. Set aside.
  3. Cook bacon in a skillet over medium heat for 5 minutes. Add onions and leeks and cook, stirring until softened and caramelized, approximately 15 minutes. Add the apples and cook for additional 5 minutes.
  4. Preheat oven to 350 degrees F. Lightly coat a deep baking pan with cooking spray.
  5. Cut the tops of bell peppers and scrape the vein and seeds from the inside. Place 2 TBSP of potato mixture in the bottom and press firmly with a spoon to fill the gaps. Top with 2 TBSP of aple mixture and add a layer of gruyere cheese. Add another layer of potato + apple mixture + cheese and cap the pepper. Repeat this process for the other peppers.
  6. Place pepper right side up with cap and place on baking pan. Cover tightly with foil and bake for an hour. Serve warm with sour cream.
