  1. Mix all ingredients except egg yolk in a chilled bowl. Add additional salt and pepper to your taste.
  2. To serve, press tartare in a 2" tall ring mold on a plate. Remove the mold and top with egg yolk. Distribute baguette toast around the tartare.
