⚽ World Cup 2018 Game 1 – Russia vs. Saudi Arabia
Salad olivier is the Russian version of the potato salad. In this interpretation, we substitute the potato for chickpeas, which is an important protein in Saudi Arabian diet. It results in a low-carb, high-protein version that doesn’t compromise the texture and the taste of the original dish. A perfect sidedish for picnics, potlucks and futbol/soccer viewing parties.

Ingredients
- 2 whole carrot diced into 1/2 inch cubes
- 4 eggs
- 1 cup peas frozen
- 1 can chickpea 15.5 oz can, drained and rinsed
- 1 cup sweet ham (i.e., serrano) diced into 1/2 inch cubes
- 3 pickle halves diced and drained
- 1/2 cup mayo
- 1/2 tsp black pepper

Instructions
- Boil the diced carrot and frozen peas in water for 10 minutes. Drain water and let it cool to room temperature for 20 minutes.
- Hard boil the eggs and then peel and dice into 1/2 inch cubes.
- Combine all the ingredients and toss. Cover and refrigerate for at least 4 hours or overnight before serving.
