⚽ World Cup 2018 Game 14 – Tunisia vs. England
During the hot summer days, nothing screams “posh” more than a cool, light Eton Mess. My take, the Carthaginian Mess, substitutes the traditional strawberries of this British dessert with Tunisian influences of apricots and pomegranates. The whipped topping also has yogurt for a velvety tart texture interspersed with the meringue crunch. Pinky up regardless of where you enjoy it.

Ingredients
- 2 pomegranate seeded
- 6 apricot chopped
- 2 cups heavy whipping cream
- 2 TBSP powdered sugar
- 1/2 cup plain yogurt
- 10 meringue cookies rough chunks
- mint leaves for garnish

Instructions
- Mix the pomegranate and apricot in a bowl and set aside.
- In a stand mixer, whip the cream and powdered sugar until stiff peaks form. Fold in the yogurt until smooth then add the meringue cookies and 3/4 of the fruit mixture.
- Scoop cream mixture into individual serving glasses and top with the remaining fruit mixture. Garnish with mint leaves and serve immediately.
