Beets are synonymous with Russian comfort food and they strike a pose when they are highlighted in the prominent Egyptian breakfast of ful medames. Tossed in a garlic and citrus dressing with hints of aromatic cumin, the beets replace the traditional beans to bring a textural tender, but firmness, to each bite. The BEET FUL MEDAMES is a wonderful breakfast for Pharoahs and Tsars alike.

Ingredients
- 1 golden beet diced into 1/2 inch cubes
- 1 red beet diced into 1/2 inch cubes
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 1/4 tsp cayenne
- 1/4 tsp smoked salt
- 1/4 tsp black pepper
- 2 tsp ground cumin
- 2 cloves garlic finely minced
- 3 TBSP chopped fresh parsley
- 2 hard-boiled eggs cut into quarters

Instructions
- Put beets into a pot and fill with water. Cook for 20-25 minutes until tender. Let cool to room temperature and drain the liquid.
- In a bowl, make the dressing by combining lemon juice + olive oil + cayenne + smoked salt + black pepper + cumin + garlic + parsley. Add beets to the dressing and mix well.
- Serve at room temperature with egg wedges. Also can refrigerate before consuming.
